Our meats are carefully selected and cut by our butchers, Louis Lévesque and Germain Lamontagne. Every day, the steaks are carefully cut and kept in the aging room. The aging of our beef pieces is carried out in our aging room equipped with bricks of pink Himalayan salt for a period ranging from 35 to 65 days depending on the cuts.
In addition to benefiting from the dry aging process, the meats served at The Beast come from the Certified Angus Beef program, attesting that the beef is Angus.
